Less Stressed Dinner: Green Bean and Chicken Casserole

I mentioned last week that I have TWO standby casseroles ...this is one is another one that my family LOVES. Its a little more involved than the Creamy Chicken Casserole, but not much.

Its another one that has variables that make it easy to have the ingredients at hand. 

Green Bean and Chicken Casserole

2 cups of shredded chicken 
{breasts or leftover whatever is great}
Uncle Ben's Rice Mix - prepared
{I use the chicken and wild, or the chicken and mushroom usually}
1 can of cream of mushroom or chicken soup
{either is great)
1 cup of mayo OR sour cream
{I can tell the difference, honestly}
2 cans french style green beans
1/2 - 1 cup shredded cheddar cheese
Italian bread crumbs
(or crushed ritz, corn flakes..whatever)
Parmesan cheese ..if you have it

Mix the chicken, rice, soup, mayo, green beans and cheese in a 9x13 casserole dish. 
Top with bread crumbs (I just lightly sprinkle them over the top) and sprinkle with parmesan cheese. Place in oven, 350 degrees until bubbly and cheese is melted.

This one is great left over too!

  1. I love this casserole. Instead of the soup and mayo, I just use a white sauce. It's the way my mom always made it, so that's what I do, too. But, I love the flavor of the rice. So good.
